The grapes for The Sadie Family Wines Pofadder are sourced from meticulously selected vineyards within the Swartland, a South African region celebrated for its diverse soils, including iron-rich slate. This terrain and a Mediterranean climate contribute to the development of grapes that embody the essence of the terroir. The fruit is tended with precision, attaining optimal ripeness and flavour complexity. Grapes are partly destemmed and whole-cluster vinified for fruit and structure balance with about 30 days of fermentation on skins to tease out depth. The wine matures in conical wooden casks that don’t impart oak flavours and is left on lees for 11 months to add texture and complexity. Following de-sedimentation, the wine ages for a further month in concrete. The result is a wine with pure fruit power. The Sadie Family Wines Pofadder features red fruit, wild berry, herbal hints and earthy notes in a silky, vibrant palate. This wine has the potential to evolve gracefully with time.
