About 12 grape varietals make up this exciting blend, led by Chenin Blanc. Fruit is sourced from meticulously chosen vineyards across the Swartland region of South Africa. Swartland's diverse soils include decomposed granite, Table Mountain sandstone and chalk. Combined with a Mediterranean climate, the ideal conditions for cultivating grapes of exceptional quality are present. Whole-bunch pressing is followed by individual-plot fermentation for up to 18 months with natural yeasts in concrete eggs and clay amphoras to encourage fruit purity and concentration. This is followed by 12 months of maturation in large, old foudres before the wine is bottled unfined and unfiltered. These stages add layers of depth and character. The Sadie Family Wines Palladius Swartland displays citrus, stone fruit, florals and subtle minerality in a silky, elegant palate. This white blend has excellent ageing potential.
