The mature vineyards of Neudorf are located in the Moutere Hills, where the clay-rich soils with lines of gravel and the microclimate contribute significantly to the character and quality of the Chardonnay grapes. These conditions allow for the development of concentrated flavours while maintaining a vibrant acidity, essential for the wine's structure and ageing potential. Moutere Chardonnay is carefully crafted, with grapes hand-picked and sorted to ensure only the best fruit is used. The wine undergoes fermentation with natural yeasts and is lees aged with regular stirring in part-new French oak for one year. These stages add layers of complexity, texture and subtle oak nuances. Neudorf Moutere Chardonnay displays citrus, stone fruit, almond, toast and flint in a creamy palate with vibrant acidity. This wine has considerable cellaring potential.
