Understanding Allegrini, Amarone della Valpolicella, Classico, Veneto
The vineyards, spanning 25 hectares, are tended with care to produce Corvina, Corvinone, and Rondinella grapes that are hand-harvested and naturally dried for about 120 days. This traditional process, known as 'appassimento,' concentrates the flavors in the grapes. Post drying, the grapes are fermented and aged in French oak barrels for 36 months, and further refined in the bottle for an additional 14 months. This intensive winemaking process highlights the Amarone's characteristic depth and richness.
