Grapes – typically Marsanne, along with occasional Roussanne – are hand-selected and then laid out to dry on straw mats or suspended in airy lofts for several weeks. This process, known as passerillage, results in partially dehydrated grapes with intensified sweetness and flavour. After this step, the grapes are gently pressed and the concentrated juice ferments, a slow process due to the high sugar content. This often stops naturally, leaving a significant amount of residual sugar in the wine. The wine ages in oak for 24 months, which adds complexity. M.
