The L'Érmite vineyard is distinguished by its unique terroir, featuring granitic soils that are both poor and well-drained. These conditions stress the vines, leading to the production of small, intensely flavoured berries. The age of the vines contributes further to the concentration and complexity of the grapes, making L'Érmite a true expression of the terroir's essence. Grapes see cold-settling to promote fruit purity and fermentation takes place in casks at relatively low temperatures to preserve the Marsanne characteristics. The wine matures on lees for ten to 12 months, a step that deepens complexity and enriches texture. Ermitage L'Érmite features ripe fruit, pebbles and a fresh wash of minerality in a taut, elegant palate. This wine has excellent cellaring potential.
