The Pavillon vineyard is situated on granite-rich slopes, conditions that are key to the distinctive character of this wine. The granitic soil, combined with a favourable microclimate, contributes to the development of Syrah grapes. The age of the vines in this vineyard adds to the complexity and concentration of the grapes, ensuring a wine of remarkable depth and character. Grapes are handpicked at optimal ripeness, destemmed and fermented in concrete, steps that support fruit purity and richness. Winemaking involves careful extraction over five weeks to integrate tannins for rounded wine. This is followed by maturation in 30% new oak for 18 to 20 months, a step that enhances the wine's structure and complexity while preserving the unique expression of the terroir. M. Chapoutier Ermitage Pavillon displays dark fruit, cassis, spice, leather, earthy truffle, tobacco and a hint of minerality in a full-bodied palate marked by well-integrated tannins. This expressive wine has impressive cellaring capacity.
