Chaillot is made from Allemand’s prestigious younger vines which benefit from sun-soaked, south-facing slopes that support full grape ripening. The soil’s mineral content coupled with the vineyard's microclimate contributes significantly to the grapes' flavour profile and structure. In the cellar, Allemand employs traditional techniques and has a “hands-off” approach to winemaking. Fruit is whole-cluster fermented, to tease out flavour depth and structural components. The wine matures in oak for 24 months, developing layers of nuance and complexity while allowing the natural expression of the Syrah grape. It’s bottled unfined and unfiltered to encourage pure varietal, terroir and vintage expression. Thierry Allemand Cornas Chaillot displays ripe blackberry, cassis, black pepper, violet and smoky, earthy notes on a full-bodied, finessed palate with dense yet silky tannins. With ageing, the Cornas Chaillot develops greater complexity.
