The Cornas Casimir is crafted predominantly from old Syrah vines, a hallmark of the Balthazar vineyards. These vines are planted in soils rich in granite, lending a unique mineral quality to the wine. The grapes are selected with exacting standards, ensuring the use of only the highest quality fruit. Fermentation involves whole bunches for greater concentration with natural yeasts for terroir and vintage expression. Maceration enhances the wine's complexity and texture. Malolactic fermentation softens the wine and ageing is carried out for 18 months in old barrels, which contributes subtle nuances without overpowering the wine's natural character. Cornas Casimir displays dark fruit, black pepper and earthy notes, supported by a firm mineral core and smooth tannins. This wine has excellent cellaring potential.
