The Sabarotte vineyard, with its steep slopes and granite-rich soil, provides an ideal environment for cultivating high-quality, concentrated Syrah grapes. The microclimate of the area, characterised by ample sunshine and well-regulated temperatures, ensures the optimal ripening of the grapes, thus enhancing the wine's aromatic intensity and depth. Winemaking at Domaine Courbis emphasises terroir expression and the inherent qualities of the Syrah grape. Fruit is carefully selected and undergoes temperature-controlled fermentation. Ageing occurs in 70% new oak complemented by a balance of seasoned wood to promote the wine's rich fruit character. Domaine Courbis Cornas Sabarotte displays ripe black fruit, liquorice and earthy undertones, supported by a full-bodied structure and well-rounded tannins. This Cornas has an exceptional potential for cellaring.
