Understanding Rotem & Mounir Saouma, Chateauneuf-du-Pape, Omnia, Rhone
The Omnia cuvée is a tribute to the unique terroir of Châteauneuf-du-Pape. Meticulously sourced from select vineyards cultivated with organic practices located across five communes, this wine captures the essence of the Southern Rhône, offering a blend of tradition and modern winemaking techniques. Fruit is harvested manually to ensure only the finest is used. Grapes are vinified with a minimal interventionist approach in a combination of 500-litre barrels, foudres, concrete tanks and egg-shaped vessels that promote balanced fermentation and maturation. This wine ages for 18 months and is not filtered or clarified before bottling. These steps help create a terroir-expressive wine with depth and complexity. This wine features black fruit, liquorice, subtle earthiness, dried herb, spice and cocoa in a seamless, full-bodied palate supported by well-integrated tannins. Omnia boasts considerable ageing capacity.
