This exceptional wine is a testament to the Sabon family's dedication to producing wines of unparalleled quality. The vines are among the estate’s oldest with an age of about one century and are tended with a sustainable viticulture approach. Clay, sand and limestone soils enrich the fruit, leading to a powerfully rich wine. Grapes are hand-harvested so only the finest are vinified. Clusters are partially destemmed to balance fruit flavour and structure and then fermented with natural yeasts in small oak vats. Maturation takes place in small vats for 16 to 18 months, allowing it to develop complexity while preserving its varietal purity. Châteauneuf-du-Pape Secret des Sabon displays ripe black fruit, liquorice, garrigue and spice in a seamless, velvety palate with refined tannins and a thread of minerality. This wine has considerable ageing potential.
