The Quartz cuvée is sourced from vineyards where the presence of quartz stones in the soil plays a pivotal role in defining the wine’s character. These stones aid in heat retention and drainage, contributing to the optimal ripening of the grapes. The vines, some of which are over 50 years old, yield grapes with concentrated flavours and a distinctive mineral edge. Hand-harvesting and sorting ensure only the finest fruit is used. Grapes are destemmed to reduce astringency and each varietal is fermented with natural yeasts separately. This enhances the unique characteristics of each grape. The wine ages in a combination of oak and terracotta amphora for 14 months, a step that promotes complexity. Quartz features dark berry, garrigue, spice and minerality in a full-bodied, elegant palate, with silky tannins. The wine’s depth and structure suggest considerable ageing potential.
