Réserve des Célestins predominantly features Grenache and can also include other local varietals such as Mourvèdre, Counoise and Vaccarèse. Low yields of top-quality grapes are sourced from the estate’s oldest and most prized vineyards known for their Galets Roulés and sandy soils, contributing to the wine’s distinctive character. Late harvesting for very ripe fruit, is integral to the estate’s approach. The winemaking process involves extended fermentation and ageing in a combination of old oak foudres and small barrels. The wine ages for three to four years before bottling without filtration. These careful, time-honoured steps allow the wine to develop its full complexity and depth and express terroir, vintage and varietal. Réserve des Célestins displays ripe black and red fruit, spice, leather and garrigue in a well-structured, elegant palate with smooth tannins. This wine has excellent ageing potential.
