Understanding Domaine Saint Prefert, Chateauneuf-du-Pape, Cuvee Speciale Vieilles Clairettes, Rhone
The Speciale Clairette Vv is sourced from some of the oldest Clairette vines in the Châteauneuf-du-Pape appellation, known for their low-yield, high-quality grapes. The vineyard's unique composition of Galets Roulés, red clay and sandy soils contributes to the distinct flavour profile and character of the Clairette grape. The grapes are harvested manually to ensure optimal quality and undergo a careful selection process. Fermentation is with natural yeasts and whole cluster grapes, both practices that enhance fruit power and terroir expression. This unique wine matures for 18 months in glass to preserve fruit purity. It’s bottled exclusively in magnums. Speciale Clairette Vv exhibits white fruit, florals and a subtle herbaceous quality in a rich palate balanced with a crisp acidity. This wine has the capacity for extended ageing.
