Colombis is crafted from old vine Grenache, with a focus on showcasing the varietal's pure expression. The grapes are sourced from three select vineyard parcels known for their Galets Roulés (rounded stones), clay and sandy soils, all of which contribute to the wine's distinctive minerality and finesse. Winemaking practices are carefully responsive to each vintage. Fruit can be whole-bunch or part-destemmed vinified depending on the year and the richness of the fruit. Fermentation occurs with natural yeasts and the wine is aged in a combination of short, conical-shaped vats and old French oak barrels. This stage supports the development of complexity without masking fruit depth. Colombis displays ripe red fruit, garrigue herb and subtle spicy notes in a smooth, powerful, elegant palate with smooth tannins and vibrant acidity.
