The Cuvée da Capo is sourced from the estate's most prized Grenache vines, some dating back over 100 years. These vines impart concentration and complexity to the wine. The Mediterranean climate is ideal for achieving perfect fruit ripeness, enhancing their flavour intensity and depth. The winemaking philosophy at Domaine du Pegau emphasises minimal intervention to allow the pure expression of the fruit and terroir. Grapes are hand-harvested and fermented using natural yeasts in large oak foudres. The wine undergoes an extended ageing process which adds to its complexity and longevity.
