Les Cadettes is a blend of Grenache, Syrah and Mourvèdre, with each varietal contributing to the wine's complexity and character. The grapes are sourced from across ten of the estate's oldest and most esteemed vineyards, where the diverse soils range from pebbly terraces to sandy plots, imparting a unique minerality and depth to the wine. Grapes are hand-harvested and meticulously sorted to ensure only the best fruit is used. The three varietals are fermented together with an extended maceration to tease out rich and pure fruit and depth. The final blend matures in a mix of large casks and new oak barrels. This process preserves the distinct personality of the wine while adding layers of nuance and sophistication.
