Primarily composed of Mourvèdre, complemented by Grenache and Cinsault, Cabassaou offers a rich expression of these varietals. Fruit comes from the three single vineyards La Migoua, La Tourtine and Cabassaou. Vines have an average age of 50 years and benefit from an ideal microclimate with south-facing slopes receiving ample sunlight. Proximity to the Mediterranean Sea ensures a temperate climate. The soil is a complex mix of limestone and clay, which contributes to the wine's minerality and depth. Grapes are hand-harvested and destemmed to control flavour and structure balance. Fermentation occurs with natural yeasts in stainless steel to promote fruit purity. The wine matures in oak foudres for 18 to 20 months and is bottled unfined and unfiltered to encourage vintage and terroir expression. Domaine Tempier Bandol Cabassaou features intense dark fruit, notes of leather, earth and herb in a rich and powerful palate balanced by firm tannins and a refreshing acidity. This Bandol has considerable ageing potential.
