The Le Haut-Lieu vineyard is farmed with biodynamic principles. Its terroir, composed of clay and limestone, is ideal for cultivating Chenin Blanc. These soils contribute to the wine's notable minerality and depth. The vineyard's blend of sunny days and cool nights aids in the development of the grapes' natural sugars while retaining essential acidity. Fruit is harvested when it’s very ripe with some development of botrytis which concentrates flavours and sweetness. In the winery, grapes are gently pressed. Fermentation is halted part way through to leave higher sugar residue. The wine then sees extended maturation in oak which imparts complexity and elegance to the wine. Vouvray Le Haut-Lieu Moelleux displays orchard fruit, honey and spice in a luxuriant sweetness balanced by a vibrant acidity, closing in a long, satisfying finish. This Moelleux wine, with its exquisite structure and flavour profile, ages beautifully.
