Clos la Neore is made from fruit grown in a one-hectare plot within the acclaimed Mont Damnés vineyard in Chavignol. This hallowed ground features low-yielding old vines, steep, sun-soaked slopes and flint, limestone soils, all conditions that result in concentrated berries. This specific terroir, combined with the cooler climate of the Loire Valley, infuses the wine with its unique and complex character. Grapes are harvested late to ensure fruit richness and depth with the hand-picking method so only the best fruit is used. The vinification process is a testament to traditional methods, favouring natural yeast fermentation and maturation in large, centenarian oak foudres to preserve the authentic expression of the grapes and the land. There is some lees contact for textural complexity. Edmond Vatan Sancerre Clos la Neore displays vibrant citrus, green apple, hints of white florals and flint in a round, full-bodied palate.
