Quarts de Chaume is crafted predominantly from Chenin Blanc grapes, famed for their adaptability to the region's climate and soil. The vineyard is situated on the banks of the Layon River, where the microclimate promotes the development of noble rot (botrytis). This is crucial for production of high-quality sweet wines. This noble rot concentrates the grapes' natural sugars and flavours, resulting in a wine with extraordinary depth and complexity. Harvest is manual, often requiring several passes through the vineyard to pick the most perfectly botrytised grapes. Winemaking involves direct whole-bunch pressing and extended temperature-controlled fermentation, steps that promote fruit purity. The wine spends nine to 18 months in stainless steel on fine lees for delicate texture and sees no oak to let the fruit purity shine through. Quarts de Chaume features honeyed fruit, apricot, quince, almond and a subtle minerality in a luxuriant, elegantly structured palate. This wine can age gracefully for decades.
