Understanding Louis Latour, Vosne-Romanee Premier Cru, Les Chaumes, Burgundy
The domaine cultivates its Les Chaumes Pinot Noir vines with sustainable viticultural methods, a reflection of its support for sensitivity to the environment. The easterly aspect is favourable for gentle, steady grape ripening for finessed, balanced wines. To preserve the quality of the fruit, a highly selective manual harvest ensures that only the finest grapes are vinified. In the winery, this Premier Cru sees traditional fermentation in traditional open oak vats followed by complete malolactic fermentation for a soft, textured mouthfeel. It is aged in 40% new, medium-toasted oak barrels from the Louis Latour in-house cooperage for ten to 12 months to allow components to deepen for greater depth and complexity.
