Understanding Domaine de Montille, Vosne-Romanee Premier Cru, Aux Malconsorts, Burgundy
The old vines that comprise the Domaine de Montille Premier Cru Aux Malconsorts cuvée are farmed sustainably and in accordance with biodynamic principles, without the use of herbicide or pesticide treatments. The grapes are hand-picked and sorted meticulously before they are partially destemmed into wooden fermenters, where fermentation occurs for nearly three weeks. Extraction is managed with pigeage twice a day and a period of cold maceration pre-fermentation. After gentle pressing, the wine is matured in French oak barrels and demi-muids, of which approximately 30% are new. This is a grand vin with big aspirations, showing a rare degree of finesse for a wine of any Premier Cru origin. It will evolve confidently in bottle over the course of several decades of careful cellaring.
