En Chevret is a Premier Cru vineyard found in the Volnay appellation in eastern France’s renowned Burgundy wine region. This 6.3-hectare vineyard is planted entirely to Pinot Noir and borders the prestigious Cailleret lieu-dits. While less famous than other Premier Cru sites in the acclaimed Volnay commune, Pinot Noir from En Chevret is rich, elegant and accessible. The Domaine Louis Latour Volnay En Chevret boasts tart red and black cherry, earthy undergrowth and hints of coffee in a rounded mouth with supple tannins, a brush of liquorice and pleasing oak tones James Suckling awarded the 2020 vintage of this Premier Cru 95 points. This En Chevret is suitable for seven to 15 years of laying down.

The domaine tends it En Chevret Pinot Noir vines with sustainable viticultural methods. The plot benefits from a southeasterly aspect for maximum yet gentle sun exposure for gradual berry ripening on rich clay-limestone. Fruit is carefully harvested manually in a highly-selective process that ensures only the finest fruit is vinified. In the winery, this Pinot Noir undergoes fermentation in Burgundian open oak vats followed by complete malolactic fermentation for a creamy, soft mouthfeel. It is aged in 35% new, medium-toasted oak barrels for ten to 12 months to allow components to balance and deepen. Wine Enthusiast says: “While it's an age-worthy wine with taut tannins in youth, its current exuberance readily charms as well”.
