The Premier Cru Les Santenots cuvée by Domaine Yvon Clerget is sourced from a 0.68 hectare plot of Pinot Noir vines planted in the Premier Cru designated Les Santenots vineyard. The rocky, limestone rich soil of the vineyard combines with its prominent position on the eastern slope of the Côte de Beaune to yield grapes of great depth and phenolic intensity. The Santenots climat is in fact within the commune of Meursault and Chardonnay produced from the various lieux-dits must be labelled as such, although Pinot Noir wines can take the Volnay name. This is a powerful wine for a Premier Cru Volnay, offering a muscular core and a rich, fleshy mouthfeel.

The average vine age of the Domaine Yvon Clerget in the Les Santenots vineyard is 30 years old, and they are farmed sustainably with an emphasis on organic practice. The grapes are hand-harvested and sorted meticulously prior to destemming into wooden fermenters, although some whole bunches are returned to add freshness to the cuvée. Fermentation occurs for approximately three weeks, and extraction is managed with both punch-downs and pump-overs. After gentle pressing, the wine is racked to French oak barrels of which 30% are new, where it matures for 16-18 months. This is the boldest wine in the Clerget portfolio. By far the most intense of their range of Volnay Premier Crus, it has cellaring potential of up to two decades.
