The Premier Cru Les Caillerets cuvée by Domaine Yvon Clerget is sourced from a 0.47-hectare plot of Pinot Noir vines planted in the Les Caillerets vineyard, just to the south of the village of Volnay. The position of the vineyard on the mid-slope of the Côte de Beaune as it extends towards Monthelie offers the vines good exposure to the sun. The well-draining soils of limestone-marl encourage deep root penetration and good phenolic accumulation during the ripening period. The Clerget holdings here are some of the oldest farmed by the domaine. These old vines yield a wine of concentrated dark fruit character and good balance of acidity.

The Domaine Yvon Clerget holdings in the Premier Cru Les Caillerets vineyard contain some of the estate’s oldest vines, some of which are 82 years old. They are farmed sustainably, and the grapes are hand-picked and typically destemmed into neutral wooden vats for fermentation with native yeast. Fermentation typically lasts three weeks and is managed with both pump-overs and pigeage techniques. After gentle pressing, the wine is racked to French oak barrels of which 30% are new, and maturation occurs for 16 months. This is one of the most fruit-forward wines in the Clerget portfolio, offering a complex bouquet of floral, cassis and black cherry notes and a succulent palate with a fresh streak of acidity.
