The Premier Cru Clos des Chênes by Domaine Francois Buffet is sourced from 45-80-year-old Pinot Noir vines split across three parcels in the vineyard of Clos des Chênes, situated just south of the village of Volnay. The particularly steep slope of the vineyard and south-easterly aspect promote good sun exposure and thus consistent ripeness. The resultant wine has a vibrant palate with notes of sour cherry and raspberry.

The grapes for the Domaine Buffet Clos des Chênes are hand-harvested and fermented with 30% whole bunches in neutral oak vats to improve tannin and colour extraction. Following fermentation, the wine is pressed and matured in mostly used French oak barrels, approximately 20% of which is new, where for 18 months. It is then bottled in accordance with the lunar cycle. Blending across his three separate Clos des Chênes parcels allows Marc-Olivier to create a very typical expression of this famous Premier Cru vineyard. His Clos des Chênes shows depth and structure enough to cellar well for several decades.
