The Premier Cru Les Taillepieds bottling by Domaine de Montille comes from a 1.5 hectare plot of Pinot Noir vines in the Premier Cru designated Les Taillepieds vineyard, situated on the southern outskirts of Volnay village. The particularly steep gradient of the site offers good sunlight exposure and excellent drainage, and the vines yield small quantities of ripe and concentrated fruit. This example from Domaine de Montille shows this concentration well, with a core of sapid bramble and cassis fruit and a plush palate profile.

The old vines that comprise the Domaine de Montille Premier Cru Les Taillepieds cuvée are farmed sustainably and in accordance with biodynamic principles, with much of the vineyard work conducted by hand. The grapes are picked early to retain acidity and avoid excessive levels of alcohol before they are partially destemmed into wooden vats where fermentation occurs with native yeast. Following a gentle pressing the wine is matured in French oak barrels and demi-muids, of which approximately 30% are new. This is a classically perfumed example of Premier Cru Volnay, offering plenty of presence in the mouth and a vibrant backbone of acidity, and it should mature gracefully under cork for at least two decades.
