The Premier Cru Les Mitans cuvée by Domaine de Montille is sourced from a 0.72 hectare plot of Pinot Noir vines planted in the Premier Cru designated Les Mitans vineyard in the commune of Volnay. The name refers to the vineyard’s position at the mid-slope of the Côte de Beaune. The Domaine de Montille holdings are spread across the middle of this mid-slope, benefiting from optimum sun exposure and a wide variety of soil types that lend a composite sense of the terroir to the final cuvée.

The old vines that comprise the Domaine de Montille Premier Cru Les Mitans cuvée are farmed sustainably and in accordance with biodynamic principles, with the application of only natural plant-based compounds and without chemical input. The grapes are hand-picked and partially destemmed into wooden fermenters (although some whole clusters are retained), where fermentation occurs for nearly three weeks. Subsequent élevage is conducted in French oak barrels and demi-muids, of which approximately 20% are new, for a period of 18 months until bottling with non-sterile filtration. Les Mitans is one of the standout terroirs of Volnay, and this expression by Domaine de Montille showcases its deep, almost floral perfume and nuanced palate profile perfectly, in a framework robust enough to cellar well for at least a decade.
