Bordering Chassagne-Montrachet at the south-eastern end of the Saint-Aubin appellation, and resting on the foothills of the Montagne de Savoie, the Premier Cru ‘Les Combes’, is an umbrella title, that includes wines made from grapes from the Les Combes au Sud, Pitangeret and Le Charmois vineyards. Wines made from any combination of these vineyards can be labelled ‘Les Combes’. Pierre-Yves Colin-Morey Saint-Aubin ‘Les Combes’ comes from a small 0.33 ha parcel of 30-year-old vines, planted on limestone scree and brown limestone clay soils, which are perfectly suitable for high-quality Chardonnay.

Understanding Pierre-Yves Colin-Morey, Saint-Aubin Premier Cru, Les Combes, Burgundy
Made from Chardonnay, this wine is produced from hand-picked fruit from sustainably farmed parcels. With an extended élevage of up to 16 months, in 350 litre demi-muids (up to 30% new oak) without lees stirring, fining or filtration before bottling, this wine has superb tension and precision. ‘Les Combes’ is sleek and focused with a notable gunflint minerality, offering a superb expression of terroir. 2015 was the last vintage of ‘Les Combes’, due to the frost damage of 2016, which significantly reduced volumes. For the 2016 vintage, Colin-Morey released Hommage à ‘Marguerite’, combining the fruit from three of their Saint-Aubin Premier Cru sites: Combes, Perrières and les Creots. This blend has continued to be produced in subsequent years.
