Understanding Francois Carillon, Puligny-Montrachet Premier Cru, Les Perrieres, Burgundy

Praised for its ‘gorgeous mouthfeel’ by Burghound, François Carillon’s Perrières is a mineral-driven Chardonnay, offering aromas of green apple and lemon zest. The vines are farmed following organic, biodynamic and non-traditional principles. Like all Domaine François Carillon wines, this Perrières spends a year in oak, where it is matured on the lees with occasional stirring. The wine is then transferred into stainless steel vats for six months before being bottled between January and April.
