The Premier Cru Le Cailleret bottling by Domaine de Montille is sourced from a 0.86 hectare plot of Chardonnay vines planted in the Premier Cru designated Le Cailleret vineyard, on the slope of the Côte de Beaune south of the village of Puligny-Montrachet. The plot is well positioned on the mid-slope of the vineyard and at the same elevation and adjacent to the Grand Cru vineyard of Le Montrachet itself. The soil shares many of the characteristics of its neighbour, and every vintage the Le Cailleret cuvée by Domaine de Montille shows elegance and intensity of flavour that far exceeds its Premier Cru status.

The old vines that comprise the Premier Cru Le Cailleret cuvée by Domaine de Montille are farmed biodynamically without use of chemical inputs and in accordance with the lunar calendar. The grapes are hand-picked and pressed lightly in a pneumatic press before fermentation occurs in a mixture of 600l demi-muids and 228l barriques, of which up to 30% new. Subsequent élevage is conducted in a combination of oak and steel vessels before the wine is bottled after a non-sterile filtration. This is a standout wine from Domaine de Montille, balancing luscious fruit character with fine poise and length in the mouth and offering both unbeatable Premier Cru quality and exceptional value.
