The Nuits-Saint-Georges Aux Perdrix cuvée by Domaine des Perdrix is sourced from the 3.3 hectare monopole of Aux Perdrix, situated on the upper slopes of the Cote-d’Or to the south of Nuits-Saint-Georges. The vineyard is entirely owned by Domaine des Perdrix, and its prominent gradient and south easterly exposure produce Pinot Noir grapes of full ripeness and complex phenolic character every year. This is a quintessential Nuits-Saint-Georges, with abundant black fruit character, notes of pencil lead and firm, gamey tannins.

Understanding Domaine des Perdrix, Nuits-Saint-Georges Premier Cru, Aux Perdrix, Burgundy
The Pinot Noir vines in the Aux Perdrix monopole were planted between 1922 and 1955 and produce small quantities of high quality grapes. They are hand-harvested and destemmed into oak fermentation vats, where fermentation occurs with indigenous yeast for a period of approximately three weeks. Extraction is managed with extended maceration times and manual pigeage. After light pressing the wine is transferred to French oak barrels, of which 50% are new, and matured for 18-20 months. The result displays a plush bouquet of cassis and violets with an ample mouthfeel and enough tannic structure to evolve gracefully with ten years or more of cellaring.
