The Cuvée Les 8 Ouvrées by Domaine des Perdrix is sourced from a 0.3 hectare plot of Pinot Noir vines located in the famous monopole Aux Perdrix, to the south of Nuits-Saint-Georges. In old Burgundian an ouvrée was the typical unit of land that one winegrower could cultivate in a single day, and this cuvée by Domaine des Perdrix represents an assemblage of some of their oldest vines. As a result the wine shows great intensity for a Premier Cru, with the characteristic dark fruit nuances so typical of the Nuit-Saint-Georges appellation and a full mouthfeel with fine, silky tannins.

Some of the Pinot Noir vines in the Aux Perdix monopole were planted as far back as 1922, and the old vines are sustainably managed with much of the viticulture conducted by hand. The grapes are hand-picked and are entirely whole bunch fermented (there is no destemming) to help tannin integration and lend phenolic complexity. Fermentation occurs with natural yeast and the extraction is managed with pigeage. After light pressing the wine is transferred to entirely new French oak barrels for a maturation period of 15 months. The result is a bold yet elegant wine, showing seamless integration of fruit notes and wood tones. It should continue to develop in bottle for well over a decade.
