The Premier Cru Aux Thorey cuvée by Domaine de Montille is sourced from a 0.7 hectare plot of Pinot Noir vines in the Premier Cru designated Aux Thorey vineyard, to the north of Nuits-Saint-Georges. One of a slew of respected Premier Cru vineyards on this section of the Côte de Nuits with a distinctly south-easterly aspect, the wines from Aux Thorey tend to show good ripeness and aromas of black fruit notes and firm tannins on the palate. This example from Domaine de Montille is striking in its perfume, possibly due to its proximity to the commune of Vosne-Romanée where such aromatic profusion is considered highly typical.

The old vines that comprise the Domaine de Montille Premier Cru Aux Thorey cuvée are farmed sustainably and in accordance with biodynamic principles. The grapes are hand-harvested and partially destemmed into wooden fermenters, although a portion of stems and whole bunches is retained to amend tannin structure and add aromatic intensity. Following fermentation of nearly three weeks, the wine is pressed to French oak barrels and demi-muids, of which approximately 20% are new, where maturation occurs for around 16 months. This is an elegant Premier Cru from Domaine de Montille, with fine balance between fruit concentration and freshness. The wine has cellaring potential of ten years or longer.
