The Domaine Ponsot Premier Cru Cuvée des Alouettes is sourced from a one hectare plot of Pinot Noir vines situated within the Premier Cru Mont Luisants vineyard on the hill above the village of Morey-Saint-Denis. The domaine opts to label the wine as Cuvée des Alouettes rather than Mont Luisants to avoid confusion with their iconic white wine from the same vineyard. In some vintages, the Cuvée des Alouettes may contain a portion of de-classified fruit from the Grand Cru Clos de la Roche appellation situated on the slope just below. Well-drained limestone soils and good sun exposure yield a structured wine with fresh acidity.

The wine is sourced from grapevines with an average age of 25 years, from a plot that has been farmed by the Ponsot family since the late 19th century. Today, the vines are managed with a combination of organic and biodynamic methods. Picking is conducted by hand and after destemming, fermentation begins with native yeasts. Following a period of maceration, the wine spends between 16-20 months in old French oak barrels. It is bottled with non-sterile filtration and little sulphur dioxide. The Cuvée des Alouettes is a wine for the gourmands: its freshness and vivacity make it a very culinary style of Burgundy, and it is one for mid-term cellaring.
