Morey-Saint-Denis is a commune and appellation in the Côte de Nuits sub-region of Burgundy. Though production covers both white and red grape varietals, Pinot Noir makes up approximately 95% of the production. Covering around 345 acres under vine, there is an almost equal division between Village-level, Premier and Grand Cru vineyards. Domaine Fourrier’s Morey-Saint Denis is made from vines, grown on just over half a hectare on a plot directly below the Premie Cru of La Riotte. The vines were planted back in 1961 on limestone-clay soils. The resulting wine has sharp acidity, energetic fruit and firm tannins.

Following a natural 3-to-4-day pre-fermentation cold soak, the grapes ferment spontaneously in stainless-steel tanks for approximately 3 weeks, before the juice is transferred to old oak barrels for a further 18-20 months of ageing. Bottling is done by hand at the Domaine, and in order to avoid racking and adding sulphites before bottling, Jean-Marie prefers to leave the wine with the CO2 that naturally evolves during the malolactic fermentation to ward off oxygen and maintain the freshness of the wines. The result of this process is a certain residual amount of carbon dioxide in the bottles, leading to the recommendation from Jean-Marie Fourrier to decant the wines if they are to be drunk in their youth.
