Understanding Amiot Servelle, Morey-Saint-Denis, Rouge, Burgundy
The Morey-Saint-Denis Rouge is crafted from Pinot Noir, sourced from two esteemed parcels in the limestone and clay soils that hallmark the appellation. These terroirs are known for their ability to produce wines with a remarkable depth of flavour and an elegant structure, attributes that are highly prized among Burgundy aficionados. Grapes are hand-harvested and undergo stringent sorting to ensure only the highest quality fruit is vinified. Fermentation processes allow for fruit extraction while preserving its freshness. This is followed by ageing in French oak barrels in 18 months, a portion of which is new. This enhances its complexity without overshadowing the natural purity of the Pinot Noir fruit. Morey-Saint-Denis Rouge displays red fruit, florals and earthy notes in a silky palate with well-integrated tannins and fresh acidity. This wine has excellent ageing potential.
