The Premier Cru La Perierre cuvée by Philippe Pacalet is sourced from a small plot of Pinot Noir vines planted in the Premier Cru designated La Perriere vineyard, situated on the lower slope of the Côte de Nuits to the south of Gevrey-Chambertin. The name of the climat refers to its history as a quarry, and the resultant soil is particularly stoney and free-draining, a fact of terroir that reduces vine vigour and yields only small quantities of concentrated grapes. This cuvée from Philipe Pacalet shows this concentration masterfully, with a bright core of red fruits and spices and a precise tannic structure.

The Pacalet holdings in the La Perriere vineyard are farmed organically without the use of herbicides or pesticides, and the vines are on average 45 years old. The grapes are hand-picked and fermented in whole bunches with indigenous yeast, and phenolic extraction is managed with pigeage twice a day for approximately three weeks. Following light pressing, the wine is matured in mostly neutral French oak barrels without any sulphur dioxide additions for up to 18 months. The result is an elegant and structured Premier Cru Gevrey-Chambertin, well-balanced between vibrant fruit notes and a lean, mineral character imparted by its unique terroir.
