Pierre-Yves Colin-Morey, Chassagne-Montrachet Premier Cru, Les Baudines, Burgundy
An introduction to Pierre-Yves Colin-Morey, Chassagne-Montrachet Premier Cru, Les Baudines, Burgundy
The Les Baudines vineyard is planted predominantly with Chardonnay. Perhaps not as famous as the wines from other Chassagne-Montrachet climats, Baudines wines are nevertheless very well respected. This wine comes from 45-year-old vines from a 0.75 ha parcel, situated high up the slope towards the southern end of Chassagne against Santenay La Comme. The soil here has a larger percentage of white marl rich in limestone. As one of Chassagne-Montrachet's most elevated Premier Cru sites, the grapes mature later in the cooler climate, which brings a notable minerality and freshness to this Colin-Morey wine.

Understanding Pierre-Yves Colin-Morey, Chassagne-Montrachet Premier Cru, Les Baudines, Burgundy
This is the only Chassagne from Colin-Morey produced from purchased fruit, with the domaine controlling when the fruit is harvested. This Chardonnay is fermented using native yeasts in large oak barrels (30-40% new oak), with an extended élevage of up to 18 months without lees stirring, fining or filtration before bottling. The domaine also chooses to store the wine in a very cold cellar to prevent malolactic fermentation. The resulting wines are intense and textural, the toasty richness balanced by zesty acidity, which will reward cellaring for up to 10 years.
