Les Caillerets is one of Chassagne-Montrachet's top Premier Cru vineyards. Located mid-slope on the Côte d'Or escarpment, it encompasses several lieux-dits that can take their own name or that of Les Caillerets. The vineyard is planted entirely with Chardonnay. The name Les Caillerets roughly translates to “the small pebbles”, referring to the stony character of the site’s soils. Wines hailing from Les Caillerets are regarded as being some of the finest of Chassagne-Montrachet's Premier Crus. The Domaine Louis Latour Chassagne-Montrachet Caillerets displays aromatic florality with fresh almonds. The palate is layered and generous with fresh tones of apricot, closing with a lingering finish and pleasing tension. It is suitable for five to seven years of cellaring.

The domaine cultivates Chardonnay vines on Les Caillerets with sustainable viticultural methods, a reflection of its environmentally considerate approach. The southeasterly aspect is favourable for gentle, steady grape ripening for finessed, balanced wines. To preserve the quality of the fruit, a highly selective manual harvest ensures that only the finest grapes are vinified. In the winery traditional fermentation in oak barrels is followed by complete malolactic fermentation for a soft, textured mouthfeel. It is aged in 50% new, medium-toasted oak barrels from the Louis Latour in-house cooperage for eight to ten months to allow components to deepen for greater complexity.
