Understanding Louis Latour, Chassagne-Montrachet Premier Cru, La Grande Montagne, Burgundy
Domaine Louis Latour tends old Chardonnay vines on this Premier Cru site with sustainable farming. A southeasterly aspect provides gentle yet steady grape ripening, and rich soils of nourishing marl and limestone result in fine Chardonnay grapes. Fruit is carefully harvested by hand in a highly-selective process that ensures only the finest fruit is vinified. In the winery, this finessed Chardonnay undergoes fermentation in oak followed by complete malolactic fermentation for a creamy, soft mouthfeel. It is aged in 50% new, medium-toasted oak barrels for eight to ten months to allow components to balance and deepen.
