An introduction to Simonnet Febvre, Chablis Grand Cru, Les Clos, Burgundy

Les Clos is the largest Climat in the Chablis Grand Cru appellation, spanning 26 hectares, named for the wall which once surrounded it. Situated atop a south and south-westerly facing hill, the vineyard of Les Clos features white, stony soil with high levels of limestone and clay, providing good drainage, making it suitable for viticulture. This soil is derived from the Kimmeridgian marl that underlies much of Chablis, a relic from an ancient sea under which northern France was submerged. The evidence is found in the vineyard itself, with thousands of fossilized oyster shells dotted throughout. The Chablis Grand Cru of Les Clos is planted entirely with Chardonnay. Its wines tend to be closed in their youth but develop considerable power and richness with time, benefitting from extended cellaring.

Understanding Simonnet Febvre, Chablis Grand Cru, Les Clos, Burgundy

Vinified in one- to two-year-old oak barrels and matured up to 18 months on its lees, the wine has concentration and high minerality, with notes of spice, citrus and honey. Produced entirely of Chardonnay, this is a complex and characterful Grand Cru, designed to be laid down, the richness developing as the wine unwinds with bottle ageing.
