Grenouilles is a triangular vineyard situated at the very centre of Chablis’ Grand Cru hillside. It is located in between Valmur and Vaudésir, with its base at the bottom of the slope. The soils are based on the Kimmeridgian type of a fossil-rich subsoil composed of layers of marl and limestone, which manifests itself in relatively deep white clay and pebbly limestone, allowing the vines to develop deep root systems. La Chablisienne’s outh-west facing vines average 40 years of age.

Produced from Chardonnay grapes, the wine undergoes alcoholic and malolactic fermentation in barrel, followed by 20 months aging on its fine lees in a mixture of tanks and barrels. Pouring a shimmery gold, the wine’s fine bouquet matches its colour, delivering aromas of aromas of lime, lemon oil, crisp green apples, wet stones, white flowers, all undergirded by a smoky reduction that adds complexity. On the palate, it is full-bodied, satiny and concentrated, with a structuring, pure acidity that offers stunning multidimensional elegance and leads to a long finish. William Kelley of Robert Parker’s Wine Advocate once claimed that it was ‘the most underrated wine in Chablis.’
