Blanchots is a Grand Cru climat in Chablis which is famous for its steep slope. It is situated on the right bank of the Serein, to the left of the Chablis Grand Cru Les Clos. La Chablisienne’s south-east-facing vines are 30-year-old and are planted over white topsoil of Portlandian influence and Kimmeridgian rock sub-soil which encourage deep roots. The vines are exposed to early morning sunshine, and due to the steep slope, they ripen at a gentle but relatively warm rate.

Understanding La Chablisienne, Chablis Grand Cru, Blanchot, Burgundy
From the most southerly of the Grand Cru vineyards, this wine is firm and tightly structured. The wine undergoes alcoholic and malolactic fermentation in barrel, followed by 14 months aging on its fine lees in a mixture of tanks and barrels. The wood ageing contributes to the wine’s spicy character. The pleasing bouquet offers apricot, peach, confit lemon, honeysuckle, fresh pastry and hazelnut cream. The palate is both elegant and expressive, with racy acids cutting through rich fruit to produce a wine of energy and tension.
