Drouhin-Vaudon, Chablis Grand Cru, Les Clos, Burgundy
An introduction to Drouhin-Vaudon, Chablis Grand Cru, Les Clos, Burgundy
The Domaine Drouhin Les Clos Grand Cru comes from a small 1.2-hectare plot of Chardonnay vines planted on the mid-slope of the Grand Cru Les Clos vineyard. The vineyard is planted on a south-west facing hillside of kimmeridgian marl, benefiting from maximum afternoon sun exposure and ensuring even and consistent ripeness. This bottling of Le Clos by Domaine Drouhin Vaudon displays the classic, racy acidity so typical of the Chablis soil type, supported by ripe fruit flavours and a firm mid-palate, imparted by the propitious aspect and resultant phenolic ripeness.

Understanding Drouhin-Vaudon, Chablis Grand Cru, Les Clos, Burgundy
The vines that constitute the Drouhin Les Clos cuvée are a mixture of ages - some younger vines deliver good fruit character and higher yields, while the older vines impart depth and minerality. The parcels are farmed biodynamically with horse and plough and natural organic tea applications are used to prevent mildew and rot. All of the grapes are hand-picked and lightly pressed to neutral oak barrels where the juice is fermented and matured for 12 months. The result shows notes of honey, blossom and preserved lemon, with a delicate minerality and vibrant acidity that will see this wine cellar well for at least a decade.
