The Premier Cru Vaulorent cuvée by Domaine William Fevre is sourced from a 3-hectare plot of Chardonnay vines in the Premier Cru vineyard of Vaulorent. Adjacent to the Grand Cru Les Preuses vineyard and sharing much of the same geology and micro-climate, William Fevre approach their Vaulorent as an extension of their Grand Cru range, using the same ratios of steel and barrel during élevage. This is an impressive wine for a Premier Cru, showing great finesse and fruit expression, and representing excellent value for any savvy drinker of fine white Burgundy.

Understanding Domaine William Fevre, Chablis Premier Cru, Vaulorent, Burgundy
Domaine William Fevre’s holdings in the Vaulorent vineyard are farmed sustainably, with much of the viticultural work conducted by hand. The grapes are hand-picked and sorted to remove any underripe or substandard berries prior to pressing and fermentation in a combination of stainless steel vats and French oak barrels (approximately 60% wood is used, similar to their Grand Cru wines). Following fermentation, the wine is matured for 18 months with lees contact to promote texture and ensure successful malolactic fermentation. Fruit-forward and undeniably pleasurable today, this is a wine that continues to evolve promisingly with time in the cellar.
