Understanding Domaine William Fevre, Chablis Grand Cru, Vaudesir, Burgundy
Domaine William Fevre’s parcels in the Grand Cru Vaudesir vineyard are farmed organically and sustainably. The fruit is hand-harvested and carefully sorted by hand prior to gentle pressing and fermentation in a combination of stainless steel vats and neutral French oak barrels. Subsequent élevage is conducted in contact with fine lees for up to 18 months. This is a classic rendition of the Vaudésir terroir, with a striking fragrance of blossom and orchard fruit in youth that will evolve opulently with careful cellaring.
