This Chablis from Domaine Fevre comes from a 1.1-hectare plot of Chardonnay vines located in the Grand Cru Valmur vineyard. The Fevre holdings are split between both the south and west-facing hillsides that comprise the appellation, allowing for a highly accurate expression of this single terroir. The steep topography of the vineyard acts as something of a heat-trap, encouraging consistent ripeness and phenolic accumulation in the grapes. This fragrance and fruit-forwardness is a signature of the Domaine Fevre cuvée.

The old vine holdings of Domaine Fevre in the Valmur vineyard are farmed organically and sustainably. The fruit is hand-picked and sorted meticulously prior to fermentation in stainless steel vats and neutral French oak barrels. The wine undergoes full malolactic fermentation, with élevage on fine lees, which promotes texture and flavour. The wine is matured between 14 and 16 months. The result is a pure expression of the unique Valmur terroir, with ripe fruit character and good length and texture. The wine has impeccable balance and structure that can support extended cellaring.
